I had a fabulous week with Kyle’s parents. I am so happy that they were able to visit, I just wish I wasn’t so busy while they were here!
Despite my love for my boyfriend’s parents, I am glad to have my space back. Kyle and I have a very very small 1 bedroom apartment (it is basically a two room studio) and it was pretty cramped with four people and two cats living in it for a week. I am also excited to get back into my healthy eating routine. Going out to eat every night for the past week was fun, but I am craving home cooked meals.
I began my day right with a bowl of plain low fat yogurt and granola. I added a little honey for sweetness.

I headed to the hospital for volunteer duty, but I was immediately sent home because my supervisor was out today. Bummer! I made good use of my unexpected free morning by grocery shopping and getting the apartment back in order. I also headed to the gym for 40 minutes on the elliptical, push-ups and stretching. It was wonderful!
I came home starving! I was craving eggs (gym always does that to me) so I made an egg sandwich for lunch.

I cooked 1 whole egg and 2 whites in a skillet. Once they were done, I added a veggie sausage patty, gouda cheese and ketchup and put the whole lot on wheat toast.
I enjoyed my sandwich in my little corner of the apartment. I love this wire chair and my orchids. One is actually blooming! The green dish filled with water is for the kitties. They love to look out the window and drink water on this chair.

Nothing like a hoem cooked meal, eating out does get old after awhile. Glad you had a good time though.
