Before we get to the fried rice, let’s look at what was enjoyed for breakfast.

Yay!!! Oats in a jar! Banana oats to be exact. I drank some delicious coffee with breakfast as well.

There was about 1 tbsp of PB left in this jar. It tasted fabulous all mixed into the oats.
I closed at work yesterday, but that didn’t stop me from making an awesome dinner when I got home at 10 PM.
Shrimp Fried Rice and Spinach Salad

I took a look in my fridge when I got home and saw some leftover brown rice. I also noted some veggies on their last leg, so the idea of a stir fry came into my mind. Then I looked in my freezer, saw the shrimp and knew fried rice was in order. I made it a bit healthier by using just 1 tbsp of canola oil (for two servings) and using just a splash of soy sauce. T’was yummy! It was so good, I enjoyed it today for lunch.

Tonight’s dinner was another pantry/fridge clearing meal.
Sauteed Tomatoes with Cannellini Bean

First, I sauteed a diced shallot with two cloves of garlic in 2 tsp olive oil. Next I added about 2 cups halved cherry tomatoes and heated the mix for an additional 5 minutes. Then I added a can of drained, rinsed cannellini beans and about 1/4 cup chicken broth. I let everything heat through and finished the dish with a few tsps of parm cheese. It was scrumptious. I switched it up by adding goddess dressing instead of ginger.

Then I grabbed a windmill cookie.
