Unfortunately, I was up in the middle of the night with a belly ache! I don’t know if it was the curry (Kyle said he had the same problem) or too much over-indulgence, but I was not a happy camper! I hate being awake for hours in the middle of the night! I feel a little useless today. Live and learn.

Kyle requested the above meal and to make it extra special for him, I used regular pasta. He hardly makes requests, so I wanted to deliver! To compensate for the lack of whole grains in the pasta, I had a smaller portion than normal.

Ahhh. Crumpet is also sweet! She has been hanging out in my home office space lately to encourage me to get my butt into gear. I have to admit, I am suffering from senioritis! This is my last semester of real graduate classes and I am getting antsy to move onto fieldwork. Counting down the days!

I have been lucky to be off from the past few Sundays! The bad part of working retail, you usually have to work weekends. I have really gotten to enjoy my “Sunday rituals.”
My Sundays typically go like this:
- Sleep-in until I naturally wake up – today it was around 9:00 AM
- Prepare breakfast – today I went with an old stand-by: Banana Oats + Nonfat latte

- Leisurely eat breakfast while surfing the web
- Call my mom and catch up on life (she is all the way in FL)
- Begin whatever graduate school assignment I have
- Take a break to exercise!! Today I set a new PDR in running – almost 6 miles in 55 minutes! Whoop!
- Come home, stretch and take a glorious shower
- Prepare and eat lunch – today I was craving a smoothie

In my smoothie went:
- 1 cup skim milk
- 1 scoop Designer Whey Vanilla Protein Powder
- 1/2 frozen banana
- 1/2 cup frozen strawberries
- 1 TBSP peanut butter
I also had a few of these delicious ginger snaps and a small unpictured hummus/cucumber wrap. That run made me hungry!!
Back to my Sunday ritual:
- Go back to working on whatever grad school assignment I have
- Take a break to run any errands I have or just to get outside again. I hate being cooped up all day!
- Back to school work! Of course I take mental breaks to read blogs!
- Make dinner: Tonight I went with another old standy – Tofu Champuru

I served some steamed veggies on the side. I didn’t have the produce for my typical salad…booo!

All together:

Mmmm…seaweed! It tastes so good with this dish!
After dinner:
- Keep working on school stuff or PLAY! Kyle and I typically catch up on shows, play Wii or just listen to music and enjoy each others’ company. Dessert is usually involved. Tonight I had a bite of chocolate and a frozen lime juice bar from TJ’s.
- Sleep! I hit the hay by 11 – 11:30 PM.
Sadly, I have to work next Sunday. My rituals have been fun while they lasted! Have a great night!

Why the butterflies in my tummy? Well, today was Match Day for Dietetic Internships! I am happy to report that I got into my top choice…Hunter College’s Dietetic Internship! I am proud and relieved. I have been suffering from anxiety the past few months not knowing the state of my future. I could not imagine having spent the past 4 years taking classes without getting into the internship necessary to become a Registered Dietitian. Whew!
I begin the new adventure in the fall and can not wait! It stinks that I have to work for free (well actually pay to work…I get college credit though) for ten months but it will be worth it! Before I know it, I will be taking the RD exam and actually working in the field. What an incredible journey!

Happy Sunday to all and Happy Spring Break to me!
I am so happy to have a week off from classes! I know I only go two evenings a week (Tues from 6-8 & Thur from 5-10) but it is so nice knowing I don’t have to make the hike to campus. Last night I ended up meeting up with an old friend and then proceeded to head to another friend’s birthday bash. I didn’t end up making it home until close to 1:30 AM. Needless to say, I slept well past 9 this morning. My grumbling belly got me out of bed and I had this granola bar as a pre-gym snack.

I used to eat these bars all the time until I discovered the wonderful world of Kashi. Kyle likes these Nature Valley bars, so they are always in the house. This bar looked especially appealing to me this morning.
I was pleasantly surprised when I took a look at the ingredients label:

For a “mainstream” snack, I am in shock that the ingredients list of so short and full of items I can pronounce! Way to go General Mills! My only gripes are that sugar is listed twice (sugar & brown sugar syrup) and soy lecithin is used (enough with the soy people!) but compared to other bars, this holds up well. I ate half of this peanut butter flavor for a pre-workout snack, along with a big cup of joe.
Workout
I have noticed lately that caffeine has been improving my performance and stamina during my workouts. Usually I am so rushed in the mornings that I don’t have time to make/drink coffee before I go, but recently I have been making an effort to eat a nice snack/drink coffee before heading out. This morning was another successful caffeinated workout.
- Elliptical: 35 minutes (resistance 8/10 + hills)
- Stationary bike: 25 minutes (resistance 4-9)
- Ab work: 10 minutes
- Stretching: 5 minutes

Breakfast

Whipped banana oats with a touch of brown sugar and crunchy peanut butter. This bowl was excellent.
- Quaker Old-Fashioned Oats: 1/2 cup
- 1/2 medium banana
- 1/2 cup skim milk
- 2/3 cup water (my gas stove tends to cause things to evaporate quickly, so I add extra liquid to compensate)
- dash cinnamon
- pinch salt
- splash vanilla extract

Lunch
I have been mooching off the blog world with my meal ideas lately and the green monster has finally made its way into my life.


Oh my…this is such a fantastic smoothie idea! Genius! In my green monster I had:
- 1/2 frozen banana
- 2 cups or so spinach
- 1 cup vanilla almond milk
Along with my green beverage, I enjoyed an english muffin topped with Barney Butter and Jam as well as a sliced pear.

These were pretty cheap at my local store, so I grabbed them for quick meals during the week:

Obviously, the cat was not part of the deal she just likes to help me in the kitchen. Yes…my cats are spoiled and yes, I know it is kind of gross to let my cats on my kitchen counter, but what can I say? I love them and think it is cute.

Dinner
Tofu & Veggie Stir fry with Noodles

Basically, I steamed some veggies, cooked “chow mein style” noodles and threw it all in a pan with diced tofu. I poured ready-made stir fry sauce over the top and wham! dinner was on the table. I served my quick stir fry with a big garden salad topped with a little Japanese-style ginger dressing.

Dessert

I had half of this little container, along with a few ginger snaps and a bite of dark chocolate. I am feeling quite snacky! Off to drink loads of water and relax for the remainder of the evening. Good night!
