Tofu Champuru
Ingredients:
- 2 tsp vegetable oil
- 1 medium onion, chopped
- 1 tbsp fresh grated ginger
- 2 cloves garlic, minced
- 1 block firm tofu
- 1 tbsp soy sauce (eyeball it)
- 1 tsp sesame oil (eyeball it)
- red pepper to taste
- 1 tsp dried dashi (available in oriental stores/sections)
- 2 cups bean sprounts
Preparation:
Heat vegetable oil in a large skillet over medium-high heat. Add onions and saute until translucent. Add garlic and ginger and cook until fragrant. Add the block of tofu to the skillet and use a spatula to roughly chop it up into large chunks. The ragged edges soak up a lot of flavor. Add the soy sauce, sesame oil, red pepper, and dashi to the pan, making sure to distribute evenly over tofu. Stir to combine. Let cook over medium heat for about 5 minutes, stirring occasionally. Add the beans sprouts and cook until soft. Serve over rice.
